Shredded chicken is used in many different recipes. It is great for burritos, chicken salads, on top of green salads, soups and so much more.

Instructions for Shredding Chicken:

1. Begin with any precooked chicken. Breasts work great but you can use leftover rotisserie chicken or any other type of chicken

2. Place you piece of chicken on a cutting board

With your fingers, or preferably a fork, begin to pull along the lengthwise side of the chicken and continue pulling at the chicken pieces until you have shreds of chicken

4. Now you have perfect shredded chicken for your favorite recipe!

Chicken Casserole

Ingredients:

6 chicken breasts, cooked and shredded
36 Ritz crackers, crushed with a slight amount of soft butter
2 (10 1/4 oz.) cans cream of mushroom soup
16 oz. sour cream

Instructions:

Mix soup and sour cream with chicken. Top with crushed crackers. Bake at 350 degrees for 30 minutes, or until crackers brown. You can also add fresh sliced mushrooms to the chicken casserole. Serves 6.

BBQ Chicken Pizza

Ingredients:

1 pre-baked pizza crust (like Boboli)
1/2 bottle BBQ sauce
1 cup gouda cheese
1 fully cooked and shredded chicken breast
1/4 cup red onion, thinly sliced
1/2 cup reduced-fat shredded cheddar cheese

Preheat oven to 425°F. Place crust on baking sheet. Spread with BBQ sauce. Sprinkle with gouda cheese. Top with chicken, onion and cheddar cheese.

Bake for 20-25 minutes or until cheese has melted.

Shredded BBQ Chicken Sandwiches

Ingredients:



1 ( 10 oz pkg,) angel hair coleslaw
1/3 cup light coleslaw dressing
6 hamburger buns, toasted
3 cups cooked, shredded chicken
6 tbsp BBQ sauce

In bowl, combine coleslaw and dressing, toss well. Let stand at least 10 minutes. Top bottom halves of each bun with 1/2 cup chicken, 1 tablespoon BBQ sauce, and 1/2 cup coleslaw mix. Place top of buns on top of coleslaw mix.
