Seems like there is always leftover rotisserie chicken in our house. One of my favorite things to do with this is to make Chicken Tacos or Burritos.

Chicken Tacos Recipe



1. Pick the rest of the chicken off the bone
2. Heat it up in a frying pan with taco seasoning and a small amount of water (you can follow the instructions on the taco seasoning packet).
3. Then make your favorite style taco or burrito.

I use soft shells, add a little lettuce, shredded cheddar cheese and some tomatoes. The flavor in these tacos is unbelievable! You can also make chicken fajitas this same way. Mmm...Mmmm...delicious!

One of the other things I love to do with leftover chicken is to make bbq chicken sandwiches.

BBQ Chicken Sandwich Recipe

1. Break the chicken into pcs and put in a small pan
2. Add enough of your favorite bbq sauce to coat the meat
3. Heat and serve on sandwich rolls.

That is what I call a quick and easy chicken dinner! The kids love these sandwiches served with french fries or mac and cheese.

Easy Chicken Salad

You can use leftover rotisserie chicken or cooked chicken breast. They both taste great.

Ingredient quantities are left blank because the amounts will depend on how much chicken you are using. You can determine the amounts of each ingredient based on your taste.

Ingredients:

Cooked Chicken
Enough Mayo to coat chicken
Pinch of Salt

The following are all Optional Ingredients:
Sliced Celery
Chopped Onion
Small amount of chopped apple (cored and seeds removed)
Water chestnutsPepper (to taste)

Tear or cut cooked chicken into bite size pcs. Combine Chicken with all ingredients except mayo. Add mayo after all other ingredients are combined. Chill before serving.

Sweet and Sour Chicken Stir-Fry

Ingredients:

2 or 3 cooked boneless skinless chicken breast
1 green bell pepper (slice into thin slices)
1 clove of garlic (chopped or crushed)
2 1/2 tbsp. of olive oil
1 jar of La Choy sweet and sour sauce



Cube chicken into desired chuncks; set aside.

Heat oil on low heat. Add garlic and bell pepper. Cook on low for about 5 minutes. Add sweet and sour sauce and chicken.

Cover and simmer for another 5 to 10 minutes until bell pepper is soft and tender and chicken is heated through. Serves 2-3.
