Curried Chicken Salad Recipe

Curry is a spice but not just one but several spices to form the "curry" combination. The main spices found in most South Asian curry powders are turmeric, coriander, and cumin. There may also be a wider range of additional spices included depending on the geographic region.
This chicken salad recipe is best served as a scoop on a bed of lettuce or create a chicken salad sandwich.
If you've never experienced curry food before...now is the time!
6 boneless skinless chicken breast halves, cooked and diced
1 cup chopped celery
1/2 cup diced red unpeeled apple
2 to 3 tablespoons raisins or red grapes (halved)
1/4 cup coarsely chopped pecans
1 teaspoon curry powder
1/2 teaspoon salt
1 teaspoon cider vinegar
1/2 teaspoon fresh ground black pepper
1/8 teaspoon ground cayenne pepper
1 cup mayonnaise, or adjust to your desire
Combine all ingredients except the chicken. Mix ingredients until well blended. Pour over the diced chicken and mix until chicken is well coated. Cover and refrigerate until serving time.

3/4 cup orange juice
1/4 cup white wine or white grape juice
2 tablespoons lemon juice
1 tablespoon sugar
1 1/2 cups cubed cantaloupe
1 cup halved green grapes
1 cup halved fresh strawberries
1. In a small bowl, combine the orange juice, wine or grape juice, lemon juice and sugar; mix together well.
2. In a large bowl, combine the fruit then add juice mixture and toss to coat.
3. Cover and refrigerate for 2-3 hours, stirring occasionally.
4. Once chilled, scoop into serving dishes and garnish with mint if desired.
